Lunch at a counter, one piece served at a time onto the bamboo leaf in front of you. This was the opener: a silver-skinned fish, the blue-backed kind that wants grated ginger and scallion to sit right, with a little gari to the side. Plain, and the better for it.
The acrylic stand behind reads Aomori, Ōma, which is the name to drop if you are selling bluefin tuna. The tuna came later. I liked that the first frame I kept was the modest one, the fish nobody puts on a poster.
Lunch was at Sushidokoro Jun, on the sixth floor of Ginza Six. Shot across the counter at ISO 6400, which is why the chefs behind fall away into soft white coats and the focus stays on the rice.
